Peaches naturally have a higher sugar content and can therefore appear a little firmer or slightly chewy after freeze-drying - this is actually not unusual for this variety. Freeze-dried fruit is of course not comparable to fresh fruit - but it has a long shelf life and retains many of its valuable nutrients. 😊 The consistency can vary depending on the piece, as the gentle drying process makes them light and crispy.
